Tofu and veggies - with nutty coconut sauce
Tofu and veggies
If you are looking for a quick and easy meat free meal, this is a goody!
You can mix and match the veggies and use anything you like that you have in.
Ingredients:
2 carrots, peeled and sliced
1 broccoli, cut into florets
2 capsicum, sliced
A couple of large mushrooms, sliced
1 packet of firm tofu, cut into cubes
2 tbsp cornflour
Oil for cooking
Sauce:
200mls coconut milk
2 tbsp reduced salt soy sauce
2 tbsp sweet chilli sauce
3 tbsp peanut butter
How to make:
Start off by mixing all the ingredients for the sauce together and set aside.
Thoroughly dry the tofu cubes with paper towel, then sprinkle with cornflour.
Heat 2 tbsp of oil in a large non-stick pan and fry the tofu for approx 10mins over a medium heat until golden brown on all sides.
While the tofu is cooking, steam the carrots and broccoli for around 6-8 minutes or until tender but not fully cooked.
When the veggies are cooked, add them to the pan with the tofu along with the capsicum and mushrooms, and pour over the sauce, cook for 3-5 minutes, stirring occasionally.
Serve with rice or noodles
