Carrot and currant salad

This nutritious salad will get everyone asking for the recipe this summer!

Ingredients:

  • 6 small carrots (3 large)

  • ½ dried currants

  • ½ cup sliced almonds

  • Handful of parsley

  • 4 large celery sticks

  • 50g tasty cheese

  • 1 cup chickpeas or butter beans

How to make:

  1. Using a food processor and the normal chopping blade in the bowl, chop up the parsley. 

  2. Remove the blade from the bowl and attach the coarse grating blade attachment. 

  3. Firstly grate the cheese, then the carrots. 

  4. Remove the grater blade and replace with the slicing blade and chop the celery. 

  5. Remove from the food processor and turn out into a large bowl. 

  6. Add the chickpeas/butterbeans and currants and stir the salad together. Serve and enjoy!
