Oaty Banana Pancakes

A super quick recipe without flour or added sugar. These pancakes make an easy breakfast or anytime snack.

Ingredients:

  • 2 ripe bananas

  • 2 eggs

  • ½ cup rolled oats

  • 1 tbsp chia seeds

  • 1 tsp of vanilla extract into the Blend Xtract, whizz it up and then you have your mixture already to fry

  • Oil for cooking

How to make:
The super speedy way:

  1. Blitz the ingredients together (I use the Blend Xtract attachment on my Kenwood Chef for this)

  2. Heat 1 tbsp of oil in a non-stick pan and add spoonful’s of the mixture to the pan

  3. Cook for about 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes

By hand:

  1. Mash the bananas and place into a large jug or mixing bowl

  2. Beat the eggs, then add to the mashed bananas

  3. Add the oats, chia seeds and vanilla extract, stir to combine

  4. Heat 1 tbsp of oil in a non-stick pan and add spoonful’s of the mixture to the pan

  5. Cook for about 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes

Top the pancakes with whatever you like. Yoghurt and berries work well!
