Quinoa & chia breakfast pots
This is a gluten free version of my overnight oats recipe which is so easy to make and really tasty.
Quinoa is good in SO many ways:
It is a complete protein. This means it has all the essential amino acids found in animal protein which is unusual for a plant based food.
It is super high in fibre which is great for your digestive system. With 14g of fibre per 100g it is right up there!!!
Quinoa is often thought of as a grain, but it is technically a seed.
It has higher levels of protein, iron, calcium, magnesium and potassium than rice or wheat.
Ingredients: (makes 3-4 servings)
½ cup quinoa flakes
¼ cup chia seeds
¼ cup nuts/seeds
¼ cup dried fruit
1.5 cups milk of your choice
How to make:
Mix it all together and chill overnight. Ideally, mix a couple of times while it is chilling too!
Serve with a serving of fresh fruit and some yoghurt.
