Speedy Oaty Pancakes

These delicious oat pancakes are the perfect start to your day, providing long lasting, sustained energy right through until lunch time. 

Ingredients:

  • 1 ½ cups rolled oats 

  • 1 tbsp chia seeds 

  • 1 ripe banana 

  • 1 egg 

  • 1 tsp baking powder 

  • 125g greek or thick natural yoghurt 

  • 1/4 cup milk

  • Oil for cooking 

How to make:

  1. Blend rolled oats in food processor, to make a fine flour.

  2. Add, chia seeds, banana, egg, yoghurt, milk and baking powder, blitz together to form the pancake batter.

  3. Over a medium heat, add 1 tbsp of oil in a non-stick pan and add spoonful’s of the mixture to the pan. (I used my amazing nonstick, PFAS-FREE pan from GreenPan to achieve this)

  4. Cook for about 2-3 minutes until you start to see bubbles appearing on the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes. 

Serve the pancakes with whatever toppings you like – Yoghurt, banana and berries work well!
