Veggie layer bake

Looking for something to mix up your meals? This is perfect – a great way to use up any veggies that you have at hand.

Ingredients: (serves 4-6)

  • 1 large onion, peeled

  • 300g potatoes, peeled

  • 300g kumara, peeled

  • 200g carrots, peeled

  • 200g parsnips, peeled

  • ¼ cauliflower, cut into small florets

  • ½ broccoli, cut into small florets

  • 6 eggs, beaten

  • 1.5 cups milk

  • 200g cup sour cream

  • 1 cup grated cheese

How to make:

  1. Firstly, slice the onion, potatoes, kumara, carrots and parsnips thinly, ideally 0.5 cm slices. I use my Kenwood Food Processor slicing blade for this.

  2. Next, take ½ of the sliced vegetables and create an even layer in the bottom of a thoroughly greased baking dish (approx. 25 x 35 cm).

  3. Place the chopped broccoli and cauliflower on top of the sliced vegetables, then layer the remaining sliced veggies top, again relatively neatly so they cook evenly.

  4. Next, beat the eggs with the milk and sour cream and pour over the veggies.

  5. Top with grated cheese and bake in the oven at 200 degrees for approx 30 minutes or until vegetables are tender and liquid has set.
