Quick Meal Idea - Asian-style tofu salad

A favourite, easy way to have tofu - really quick and tasty! Goes a long way and keeps well in the fridge too.

πŸ₯— 1. Combine finely sliced lettuce, capsicum, carrot, mung bean sprouts, spring onion, and mint

πŸ‘©β€πŸ³ 2. Pan-fry drained/dried tofu in a little olive oil, near the end of cooking add tamari or soy sauce and sesame seeds

πŸ‹ 3. Serve tofu and salad with a drizzle of olive oil and lemon or lime juice, and season lightly with salt and pepper 

OPTIONS:

- Boost/swap veggies - try cabbage, broccoli, green beans, edamame beans or capsicums of all colours would work

- Add some fresh or dried chilli flakes if you like a bit of heat

- I like to add chopped peanuts too
