Red Bean Dip

Planning a party, or perhaps you need to put together a platter for unexpected guests? Then keep this recipe at hand so you can quickly whip up a delicious dip.

Ingredients:

  • Red kidney beans 1 can, well rinsed and drained

  • Ginger, thumb size, peeled and thinly sliced

  • Garlic 2 large cloves

  • Juice of 1/2 a lemon

  • Handful of parsley

  • 1/2 to 1 chilli(to your taste)

  • 1 teaspoon of extra virgin olive oil

  • Salt and pepper

To serve:

  • Handful of fresh coriander

How to make:

  1. Using the Kenwood tri-blade mixer or food processor, whizz up parsley, ginger, garlic and chilli.

  2. Once blended, add in remaining ingredients and mix until combined.

  3. Serve with chopped vegetable sticks or homemade vege crisps for a colourful, healthy and tasty platter!
