Spiced Bean Patties
These tasty patties make for a great Friday night dinner, or a vegetarian Meatless Monday meal! The recipe can easily be halved or used for leftovers the next day. Give them a try!
Ingredients: (makes 6 large, 8 medium burgers)
2 cans of kidney beans drained (400g cans)
1 medium red onion
2 tbsp ketchup or tomato paste
1 tbsp fresh or 2 tsps dried oregano or mixed herbs
Handful fresh parsley
1 tbsp Mexican spice mix or smoked paprika
1 ½ cups breadcrumbs or 1 ¼ cup rolled oats
1 egg
Salt and pepper
Oil for frying
Note: Kidney beans can be substituted with black beans for a more mild, earthy taste, if preferred.
How to make:
Add half of the kidney beans, breadcrumbs, parsley, red onion, herbs, Mexican spice, ketchup, salt and pepper into your food processor and blend together thoroughly.
Remove lid, add egg and the rest of the kidney beans, pulse together gently, leaving a little more texture this time.
Scoop out a spoonful at a time to gently form patties, place on lined tray, pop in the fridge to chill.
Cook in the frying pan on a medium heat, until browned and cooked through.
Serve up with your favourite salad, or construct into a burger.
