Yummy Nutty Noodles

This colourful dish is full of veggie goodness, high protein and tastes delicious! With 30g of protein a serve it will keep you satisified.

Give it a try! 

Ingredients:

  • 400g tofu 

  • 1 large onion 

  • 2 cloves of garlic 

  • 1 large or 2 small capsicums 

  • 1 large carrot 

  • 1 cup of edamame beans 

  • 1 broccoli

  • 1 lemon or lime 

  • A few tbsps. of water 

  • 150g thick rice noodles 

  • 1 tbsp sesame oil or peanut oil 

  • ¼ cup sesame seeds (optional) 

  • Bunch of spring onions 

Optional: Beansprouts 

 Sauce Ingredients:

  • ½ cup peanut butter  

  • 2 tbsp sweet chili sauce  

  • 2 tbsp reduced salt soy sauce

  • 2 tbsp oyster sauce 

  • 1 tbsp fish sauce  

  • 1 tbsp rice vinegar (or white or white wine vinegar)  

  • ½ cup water  

Optional: 1 –2 tbsp siracha or pinch of chili flakes or sliced fresh red chillis

How to make:

  1. Prepare your vegetables, slice carrots into batons, cut broccoli into florets, slice capsicums and dice the onion. 

  2. Put tofu between 2-pieces of paper towel to soak up excess water, then crumble onto a chopping board.

  3. Heat oil in a large non-stick frying pan, cook tofu for 1-2 mins on each side until well browned and crispy. Lift out of the pan and set aside.

  4. Over a medium heat add a little oil to your frying pan, sauté vegetables.

  5. Cover the edamame beans in boiling water and then drain, add into the rest of the vegetables to cook.

  6. While vegetables are cooking, heat sauce ingredients in a saucepan, over a medium heat. 

  7. Bring a saucepan of water to the boil, add the rice noodles and cook for 6-8 mins or to packet instructions, until just tender. Rinse noodles under cool water, so they don’t stick together and drain well. 

  8. Add noodles and tofu to sauté vegetables, top with peanut sauce, combine well. 

  9. Lightly roast sesame seeds for a few minutes, sprinkle over top of the dish, add a sprinkling of spring onion, ready to serve. 

  10. Pop your noodles into serving dishes, add a squeeze of lemon juice and enjoy!

Note: Tofu comes in all different sized packets! So fine to use 300 or 400g if that’s all you can find, more or less will still work the same.
